Sweet Potato Pizza

You can put pretty much whatever you like as topping on this, its low carb and also wheat free. I opted for meat to please the men folk in my house due to the lack of a proper base and the amount of vegetables on the plate! Its quite easy to scale up and this served about 4 people.

  • 2 x large sweet potatoes, peeled and sliced thinly
  • Packet of passata
  • Basil
  • Bunch of spring onions
  • Salt and pepper
  • Jalapeño
  • Salami
  • 1 x yellow pepper
  • Ball of low fat mozzarella
  • Couple of handfuls of parmesan
  • Olive oil

Start by lightly covering a large baking tray with olive oil, using a brush to spread evenly. Lay out your sweet potato, overlapping slightly so there’s no gaps. Drizzle over some olive oil and season well. Put in the oven at 180 degrees celcius for about 20 minutes until softened and lightly browned.

Whilst the sweet potato is cooking prep the rest of your ingredients – slice the greens of the spring onion and yellow pepper, grate the parmesan and get everything ready to assemble.

When the potato is cooked, pour over the passata, season well and then add your toppings finishing with the cheese. Pop back in the oven until the cheese is melted and golden. Serve with some salad leaves.
