There seems to be a bit of a breakfast theme this week, I think mostly as I’ve been travelling again to Dubai and when staying in hotels the breakfast tends to get a bit repetitive as there’s a limit to what I can actually eat so I have had many, many omelette in the course of a week!
This is a really simple recipe, again scale up or down depending on the numbers you’re feeding. Also its really versatile I had it for breakfast with an omelette (can’t get away from them) packed with vegetables and cheese.
Simply take 1 or two sweet potatoes, spriralize them. Line a baking tray with non-stick parchment. Put the spiralized potato wedges in a bowl, add around a tablespoon of garlic olive oil, season well – you want a good pinch of sea salt, mix round to coat. Then roughly put the sweet potato on the baking parchment in rough circles. Put in the oven on 180 Celsius for around 15 – 20 minutes until golden brown. They won’t stick together so be careful when removing from parchment to plate!
