A taste of summer…mango, avocado and radish salad

This week I’ve mostly been obsessing over mangos and avocados, can’t get enough of them – although neither are recommend on the FODMAP diet for me they don’t seem to be a particular trigger as long as don’t eat them in huge quantities, so I’m trying hard to ration myself! This simple and fresh salad serves two people but as with many of my recipes can be scaled up or down according to numbers. I had this with quorn steaks but would also work well with grilled chicken, prawns or feta or halloumi cheese.

Mango, Avocado and Radish Salad

  • Rocket
  • Bunch of Spring Onions
  • 6 Radishes
  • Pomegranate Seeds
  • Large Ripe Mango
  • Large Ripe Avocado
  • Handful of Basil

Dressing

  • Juice and Zest of 1 Lime
  • Salt and Pepper
  • 1-2 tablespoons good quality olive oil

Start by getting your serving plate out and adding a good few handfuls of rocket, tear up the basil and mix in. Slice the greens of the spring onion finely and sprinkle over. Thinly slice the radish, slice avocado and peel and chop mango. Arrange on top of the leaves.

Get out a small bowl and whisk or jar for your dressing. Add the lime juice and peel and add enough olive oil so it becomes viscous/dressing like, add salt and pepper to taste. When you’re ready to eat pour the dressing over.
