So here’s another fake pasta recipe, using really simple ingredients and best enjoyed al fresco with a glass of cold, white wine or two! This makes enough for 3 portions (two for dinner, one for lunch) to take a portion for lunch the next day – put aside 1 portion of the courgette spiralized without cooking in a airtight box and when you’re ready the next day microwave for 2 minutes, squeeze some lemon, olive oil, salt and pepper over and add the chicken mix and you’re good to go! You could scale up or down this recipe depending on the mouths your feeding!
- 2 x chicken breasts
- Low fat feta cheese
- 1 x chilli (deseeded or not)
- 1 x lemon juice and rind
- Around 12 cherry tomatoes
- Bunch of fresh basil
- Garlic infused olive oil
- 4-6 courgettes depending on size!
Begin by spiralizing your courgette into noodles, set aside. Chop the chilli, greens of spring onions, half your cherry tomatoes and get your chicken sliced/chopped.
In a large non-stick frying pan heat 1 tablespoon of olive oil and then add chilli, lemon zest and spring onion greens and stir fry for a few minutes. Add your sliced chicken and cook until almost done.
Add your cherry tomatoes and stir fry until slightly softened (couple of minutes) add your basil and stir to combine. Add your courgetti to the pan and stir fry for a couple of minutes until heated through (be careful not to cook for too long so that water comes out). Take off the heat and squeeze over juice of lemon and season well with salt and pepper. Crumble over feta cheese (as much as you like!) and serve.
