Smoked Mackerel Pâté

This is one for my best friend Kirbs as I know she has a love of fish-based food items! This is so easy to make and keeps for up to 5 days in the fridge. If you’re not suffering from IBS you could add a small clove of garlic to the ingredients. This goes well on brown toast, oatcakes and bagels.

  • 1 x tub light/low-fat soft cheese (can use lactose-free if this is a trigger for you)
  • 1 x lemon
  • Smoked mackerel fillets (I prefer the ones with pepper on for this)
  • Salt and Pepper

Remove the skin from the smoked mackerel fillets and flake into food processor (use the blade fitting). Add the soft cheese, juice and rind of 1 lemon.

Blend until smooth but still thick (don’t over blend you want to be able to spread it!) taste to see if you need more lemon or seasoning. That’s it.
