Spicy and Sweet Mango Salsa

This is a really quick and simple salsa that goes really well with chicken, salmon, tuna – its spicy and sweet and also a good hit of veg/fruit for your five a day.

Spicy Mango Salsa

  • 1 x Large Ripe Mango
  • Bunch of Spring onions
  • 1 x green chilli
  • 1 x lime
  • 1 x red pepper
  • 1 x ripe avocado
  • Bunch of Coriander
  • Salt and Pepper

Peel and chop your mango and avocado, chop your red pepper  so all are similar size chunks and add to bowl. Finely dice your green chilli (either with or without seeds) and the green part of your spring onions and add to your other chopped ingredients. Give it all a good stir. Grate the rind of the lime into the bowl and then squeeze the juice in, season with salt and pepper and finally chop the coriander and add. Give it all a good stir and you’re good to go! This keeps ok in the fridge covered overnight but is best served the same day.
