Spicy scrambled eggs with avocado

This is a lovely quick and tasty breakfast, when you feel like you need a hit of vegetables and spice – usually for a morning following the night before! I served the eggs and avocado with the oat pancake recipe I posted before here

  • 2 eggs
  • Half a green pepper
  • 1 x tomato
  • 1 x chilli
  • 4 x spring onions
  • Cheddar Cheese
  • Garlic infused olive oil
  • Half an avocado
  • Salt and Pepper

Finely slice the greens of the spring onions, your chilli and green pepper. Put a small non stick frying pan on to heat and add a tablespoon of garlic infused olive oil. Once hot add your green pepper and turn down to medium and stir fry for 5 minutes, then add your chilli and spring onions and stir fry for another couple of minutes. Whilst this is cooking finely slice your tomato and add to the pan, fry until slightly softened. In a small bowl crack your eggs, season and scramble with a fork.

Turn down your pan, pour over your eggs and leave for a couple of minutes then using a spatula scramble your eggs. When almost done grate over the cheddar cheese.

Serve either on oat pancakes, toast or on their own, with slices of ripe avocado on top.
