Fried Halloumi Salad with Lime and Caper Dressing

This is based on a Delia recipe http://bit.ly/1gjbqLS as I can’t eat bread I like this served on salad leaves and avocado, some raw green pepper would also work well. This serves two people for a light lunch.

Fried Halloumi Salad with Lime and Caper Dressing

1 halloumi low fat cheese
2 tablespoons olive oil
2 level tablespoons well-seasoned wheat free plain flour (I use Dove’s Farm)
1 Ripe Avocado
Salad Leaves

Dressing

  • Juice and zest 1 lime
  • 1 heaped tablespoon capers, drained and finely sliced
  • 1 heaped teaspoon grain mustard
  • 1 level tablespoon finely chopped fresh coriander leaves
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon garlic infused olive oil
  • salt and freshly milled black pepper

Start by making up your dressing in a bowl and leave to one side whilst you prep your salad. Put a couple of handfuls of leaves on each plate and slice your avocado and arrange on top. Slice the halloumi cheese into 8 even slices and pat dry.

Heat the olive oil in the pan, whilst this is heating up it needs to be really hot, dust and cover your halloumi in the seasoned flour.

Add the halloumi to the frying pan and cook until golden brown on both sides – make sure you don’t move it around too much just flip once over other wise the cheese may break up.

Place on your salad leaves, pour over dressing and enjoy! Best consumed in the garden in the sun with a nice cold glass of wine!
