This was a happy accident, having only a small omelette pan or a massive large frying pan I opted for the latter and ended up with possibly the largest fritatta known to man! On the plus side there’s plenty to freeze for lunches in the coming weeks. Just defrost and microwave for a couple of minutes until hot. This is great with salad – I particularly like it with roasted aubergine and pomegranate or beetroot and apple (skin removed for us with IBS and a limited quantity as it can be a bit of a trigger).
- 2 x large sweet potatoes – its up to you on quantity here but basically once cut you want them to fill up roughly half the pan
- Pack of low fat feta cheese
- 10 eggs (scale up or down depending on size of frying pan used)
- Half a pack of baby leaf spinach
- Olive oil
- Salt and Pepper
Peel and slice your sweet potatoes – put on baking tray and pour over 1 tablespoon of olive oil, check they’re evenly coated and season well. Put in the oven at around 200 degrees for around 20 minutes until softened and slightly browned. You could do this the day before and keep in the fridge until needed if time is short in the evenings.
Break your eggs into a jug and season with salt and pepper and beat with a fork to combine. Put your frying pan on and heat through with a little oil to coat the bottom, turn down to medium heat and arrange half the sweet potatoes to cover, then layer with a handful of spinach, crumble half the feta and some salt and pepper. Then add the rest of the sweet potato, spinach and feta.
Finally pour over the beaten eggs, push the vegetables down so the egg just covers them – you can add more egg at this stage if you haven’t enough to cover. Cook for around 15 minutes until the bottom is set (keep an eye and turn down if it starts to colour too much) in the meantime heat your grill. Once the bottom is set put under grill to set (make sure your pan won’t melt under the grill and is suitable for putting under the grill!) if you’re using a smaller pan you could use a plate to flip the fritatta over to cook the other side – in this case with 10 eggs you probably would struggle! Serve with salad!
